Add everything apart from the spinach to your slow cooker and mix thoroughly.
Cook on low for 6-8 hours (although longer doesn’t hurt).
Half an hour before you’re due to serve add the spinach to the slow cooker and replace the lid. This will just wilt down on top and keep it’s green color.
Serve on a bed of rice.
