A Festive Slow Cooker Garlic Rosemary Tri-Color Potatoes

The best way to have a colorful healthy dish for your family.

Since we are still on a potato high, what better way to give you another recipe that will make you enjoy making and eating potatoes. And like any most slow cooker dishes, this recipe is super easy to make and very very simple. You won’t need to use very extravagant ingredients for this.

This recipe will give you a tri-color potato dish filled with flavors coming from rosemary, thyme, oregano, garlic and parmesan. The mix of spices and herbs is just fantastic. And cooking the potatoes in the slow cooker makes them very tender. It also gives out a slight touch of crisp tri-color potatoes.

Slow Cooker Garlic Rosemary Tri-Color Potatoes

Ingredients:

1 3lb bag of tri-color potatoes OR {1 lb of red-skinned new potatoes, 1 lb pound baby Yukon Gold potatoes &1 pound baby purple potatoes}

4-5 tablespoons extra virgin olive oil

1 teaspoon sea salt

1/4 teaspoon black pepper

4 cloves garlic, minced

1 teaspoon fresh or dried rosemary

1 teaspoon dried oregano

2 – 3 sprigs fresh thyme

2 tablespoons grated parmesan for sprinkling

Instructions:

Wash and dry potatoes. Cut in halves or quarters but making each of them approximately the same size.

Line a slow cooker with aluminum foil, leaving a slight overhang to wrap the potatoes on top.

Coat a thin layer with nonstick spray.

Place potatoes, olive oil, garlic, oregano, thyme and rosemary into the slow cooker. Season with salt and pepper, to taste.

Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours, or until tender.

Sprinkle with Parmesan if desired. Serve immediately.
